Yes, you read correctly. We are not talking about fried octopus flesh, which you have probably tried before, but the fried ink sack of the octopus. The ink sacks are very carefully removed from the body so they don’t pop, they are then boiled and deep fried. This dish is most commonly found on the island of Kalymnos. If you are a daredevil with new foods, this is definitely one for the bucket list.
